Thanks to Virgin Mediocre deleting my hard drive earlier this year, I no longer have the owners manual on my PC. Can anyone tell me how much coolant I need and how to bleed the cooling system when I refit the radiator and pipes in the next couple of weeks.

A completely dry system will takes 3 litres, to include engine, radiator and expansion tank.
Guess you might need a bit less than that, depending on how far you drianed down.
Fill it through the filler under the fuel tank. There is a bleed screw on the water pump, near the clutch slave that you might have to crack to get all the air out of the pump. Fill the system and run it up until the thermostat opens. You will see the level drop in the 'stat housing. Top up and seal.
I do a bit of hose squeezing when initially filling to get all the major air bubbles out
